Stuffed Bell Peppers with Spiced Quinoa & Vegetables
These stuffed bell peppers are packed with a flavorful quinoa and vegetable filling, perfectly seasoned with Deanz Vegetarian Spice Blend. They make a nutritious, hearty, and colorful meal!
Ingredients
4 bell peppers (any color), tops removed and seeds scooped out
1 cup quinoa, rinsed and cooked
1 tbsp olive oil
½ red onion, finely chopped
1 carrot, diced
1 zucchini, diced
1 tomato, chopped
1 cup spinach, chopped
2 ½ tsp Deanz Vegetarian Spice Blend
½ tsp salt (adjust to taste)
½ tsp black pepper
½ tsp red chili flakes (optional)
1 tbsp lemon juice
¼ cup feta cheese or dairy-free cheese (optional)
Fresh cilantro for garnish
Directions
Preheat oven to 375°F (190°C) and grease a baking dish.
Sauté the veggies – Heat olive oil in a pan, add onions, carrots, and zucchini. Cook for 3-4 minutes until softened. Stir in tomatoes, spinach, and spices, and cook for another 2 minutes.
Mix the filling – Add cooked quinoa, lemon juice, and feta (if using) to the pan. Stir well and remove from heat.
Stuff the bell peppers – Spoon the quinoa mixture into each bell pepper and place them in the baking dish.
Bake – Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until the peppers are tender.
Serve & enjoy! – Garnish with fresh cilantro and an extra sprinkle of feta.
