Asparagus Saffron-Infused Risotto with Deanz Mediterranean Spice

Ingredients

  • 1 cup Arborio rice
  • 3 cups vegetable or chicken broth (warm)
  • 1/2 cup white wine (optional)
  • 1/2 small onion, finely chopped
  • 2 tbsp olive oil or butter
  • 1/4 tsp saffron threads (soaked in 2 tbsp warm water)
  • 1 tsp Deanz Mediterranean Spice Blend
  • 1/4 cup grated Parmesan cheese
  • Salt & pepper to taste 1cup diced Asparagus blanched
  • Fresh parsley for garnish

Directions

  • In a pan, heat olive oil/butter and sauté onions until translucent.
  • Add Arborio rice and toast for 1-2 minutes.
  • Pour in white wine (if using) and stir until absorbed.
  • Gradually add warm broth, one ladle at a time, stirring continuously until absorbed before  adding more.
  • After 10 minutes, add the saffron water and Deanz Mediterranean Spice Blend, stirring  well.
  • Continue adding broth until the rice is creamy and tender (about 12-16 minutes total).
  • Add Asparagus to the mix and stir for 1-2 minutes turn the heat off
  • Stir in Parmesan, season with salt & pepper, and garnish with parsley.  9. Serve warm and enjoy this luxurious, aromatic dish!
